Christmas Celebrations

It is Christmas again and Woking and Guildford Community Group are having gatherings. Managed to attend Woking Group but not Guildford Group due to my work. I decided to give the groups equally. Hence I did 2 sets of tapioca cakes and pandan yoghurt cake.  Very Asian style.

Whenever one mentions tapioca, it makes me think about the Japanese War. Why? Coz my grandfather used to tell me lots about their hardship during the Japanese War in Malaya. Pple were scared, poor and hungry and tapioca was cheap and easily available food.  We are just too lucky these days. When I was little, I was trained to address or say hello to pple by asking  ' Chia pa bui'- ( have you eaten?)  It was a common phrase simply because most pple were hungry during the war and it would be helpful to feed the hungry.

However, instead of  asking ' chia pa bui' these days, it would be ' chia si me' ( what have you eaten?) ? lobster ? big prawns.We are moving fast and demanding more. What type and how expensive is your food  seems more important than trying to fill the stomach. Perhaps I am wrong and this is very much self opinionated.



Pandan Yoghurt Cake
The tapioca cake - really quite like it. Shew... I ate quite a bit before bringing to the gathering... ok, just tasting it.  MMM... my homemade tapioca cake.

Aunt Katie and Aunt Liz bought some pandan flavour and essense when they went back to Asia. I love pandan - lovely smell and nice colour. My old home used to have pandan plant. My mother used it in her cooking and dessert. Miss my mother cookies these days.

The yoghurt used was greek yoghurt. Hence, the cake was very very moist and slightly bitter. The cake had 2 colours- unfortunately I did not manage to take the pictures.  The bottom layer was white and the top layer was green. I thought it was so pretty. Aunt Mei Li loved this cake. :)

Catering and baking for many can be an enormous tasks. Welcome party will be about min of 100 pple. To ensure most pple have something to bite during tea time or dinner, I cracked out my head thinking what would be best to bake to such large group of pple.
I enlisted S to give me a hand this time. The idea of doing small cornflakes and rice crisps cookies was fantastic. It took 2 short evenings to complete the task. We counted the cookies but I forgot the total amount!  At least, about 300+++ cookies.

You would have noticed that I normally do round decorative cake. A big change this time.
Be creative this time and ventured to do a double layer rectangular cake. The fillings were pineapple jam and fresh cream. The decorations, as you can see, were strawberries, chocolate and colourful rice, smarties at the corers and 3 different colour flowers at the centre.
The 2 layered cake was moist victoria sponge cake.

In addition to the cookies and double layer rectangular cake, I decided to bake more- just in case the bakes were inadequate for all.
Baked an old time classic lemon drizzle traybake. Put lots of fresh squeezed lemon in it. That is what I called homemade and real lemon cake!
The other traybake turned out fantastic too. Really love the hazelnut flakes decorations.

C's Birthday. Since she is still in high school, I think giving cookies to her and thus she can treat her other friends too would be great. 
Coconut munchies are really nice beautiful cookies. Crunchy coconut cookies. 
Melting moments are just mouth watering. Made up from oats.
There were at least 150 cookies all together. Again, I lost count. Beautiful cookies. 



My cookies jar- my favourite
  This is my favourite cookies jar. I took me quite long to find this one. It is really cute! It reminds me of the cookies jar we used to have when we were little. The cap is so cute. Dont you just fall in love with it.
It is a good cookies  jar coz it is transparent, big, light, air tighted.  Do you want to give it a hug?

SAD TO SAY- someone broke my cookies jar. I was very heart broken. In fact, I was even more upset coz no one bother to inform or ring me. I was told by S that my very favourite cookies jar was broken during the student welcome party. Meow Meow really really miss my cookies jar.

Till today, I still have not find another beautiful cookies jar like this.

2 Cakes and 2 Traybakes

The monthly birthday celebration is here again.My schedule was really tight and Freya only informed me the day before.
Managed to bake 2 cakes- walnut cake and french chocolate cakes.
Also 2 large traybakes- one smarties cake and the other--- ooops, i cannot recall but definitely not chocolate cake. the chocolate is just the icing with mixture of nuts topping.

Aunt Amanda's daughter, C birthday.
I had already given her the cookies as present.
They wanted to throw a birthday dinner. She did not want me to coook but prefer me to bake instead.
Aunt Meili's birthday had just passed too and I was busy with my work thus unable to celebrate for her.
Decided to do some fresh bakes for them.
Since I love fruity and nutty cakes, I decided to do some colourful bakes.  I love colourful things and life should be colourful and not just grey, white and black. It will be so dull.
These bakes turned out wonderfully. Enjoy the pictures :)
Hazelnut Meringue Cake

 This cake was wonderful. Making meringue always enquire a bit more effort. It turned out beautiful. Of course, yummy. I just could not resist.
I was very generous with the hazelnuts. Hazelnut and meringue were wonderful.
Topping with fresh big juicy raspberries simply made the cake irresistable! Gorgeous!
Austrian Curd Cheesecake

This cake is very rich in cheese. I used ricotta cheese for this cake. See, I am making effort to do some cheese related cakes though I once told you I am not a very good with cheese due to my traditional Chinese background.
Lovely moist rich cheese cake.  :)

Fruit Chiffon Cake- 5 layers
Look at this Cake! For those who not into baking, let me tell you that the baking of the cakes were easy but the decorations were tricky.
Chiffon cakes need patience- lots of beating to make it fluffy. Of course, with machines - everything is made easy! Thank God for that!

The bottom cake consisted of 2 layers and the upper cake consisted of 3 layers. The total of 5 layers.
Each layer was coated with minimal fresch cream and had their specific fruits.  I cannot recall the sequence of the fruit layers but they were strawberries, kiwi, mandarins, pineapple, pears.
To make it nice, it requires time and effort to first, cut these fruits, then tucked them neatly and firmly in between the layers of the cakes.

The colourful external decorations were all fresh fruits plus freshly toasted hazelnut flakes.
You can see various colourful fruits like kiwi, strawberries, raspberries, blueberries,peaches.
The top was decorated with big juicy strawberries, colourful and chocolate rice and some smarties sweet.
